Prior to cooking, boil potatoes. Tip: You could do it ahead of time and store boiled potatoes in a fridge.
STEP 1: Slice potatoes thin. Tip: Cold boiled potatoes are much easier to slice. Chop onions and peppers.
STEP 2: Melt 2 tablespoons of oil and 1 table spoon of butter in a pan.
STEP 3: Add onions, peppers and fry until onions are translucent.
STEP 4: Add water (1/4 cup) and more oil and butter.
STEP 5: Add potatoes.
STEP 6: Fry until crispy. Tip: Adding butter as you fry gets more crisp.
STEP 7: Add salt and pepper. Enjoy!
